    Odd symptoms Henry.

Pressure comes from heating up the coolant.

So no pressure is from? No heat.

    Thermostat stuck open?

Or a hole at the top of the rad.

For absolute certainty on the head gasket get a sniff test done.

The temp according to my Code reader sits at around 81-86c is that acceptable.

Sniff test has been completed and there is no issues.

    so initial panic has disappeared!

Maybe it's just an air block that'll shift eventually!
They said it couldn't be done, so i didn't do it

Henry, I was told by my Indy many years ago that the ‘S’ can be particularly problematic when it comes to bleeding the system.
Start from cold with the cap of the tank and the heater on full. Then just let it idle up to temperature, if there is any air in it then it will burp itself out.

And sometimes this doesn't do it either.

So park facing upwards on a steep slope, and/or squeeze the big fat radiator hose rapidly, hold for a second, release slowly, repeat 10 times.

Combustion pressure is much higher than coolant pressure. Head gasket issues will pressurise your hoses rock hard and undoing the cap will create a kettle effect.. if it's not losing coolant or misfiring from cold then I'd look elsewhere..
